Ingredients:

100g butter, softened
100g caster sugar
1 egg, beaten
200g plain flour
1 teaspoon baking powder
2 tablespoons apricot jam or conserve

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease two baking trays with butter or line with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg until combined.
Sift in the flour and baking powder and mix until it forms a dough.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out shapes using cookie cutters of your choice. Place on the prepared baking trays.
Bake for 12–15 minutes until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
Spread each cookie with apricot jam or conserve before serving or storing in an airtight container for up to 3 days.
