Ingredients:

2 chicken breasts, diced
1 onion, diced
2 cloves garlic, minced
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon garam masala
1/2 teaspoon chili powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
2 tablespoons olive oil
1/2 cup plain yogurt
1/4 cup mayonnaise
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1/4 cup chopped roasted cashews
1/4 cup raisins
1/4 cup diced celery
1/4 cup diced red onion
Juice of 1/2 lemon

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat.
Add the diced chicken and onion and cook until the chicken is cooked through, about 8 minutes.
Add the garlic, curry powder, cumin, coriander, turmeric, garam masala, chili powder, ginger, cardamom, cinnamon, and black pepper and cook for 1 minute.
Remove from heat and let cool.
In a large bowl, combine the cooled chicken mixture, yogurt, mayonnaise, cilantro, mint, parsley, cashews, raisins, celery, red onion, and lemon juice.
Mix until combined.
Serve chilled or at room temperature.
