Ingredients:

200g firm tofu, cubed
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup cooked quinoa
1/2 cup cooked brown rice
1/2 cup cooked black beans
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup diced bell pepper
1/4 cup chopped fresh parsley
2 tablespoons freshly squeezed lemon juice

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place the cubed tofu on a baking sheet lined with parchment paper.
Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, sea salt, and black pepper.
Bake for 15 minutes, flipping the tofu halfway through.
In a large bowl, combine the cooked quinoa, brown rice, black beans, tomatoes, red onion, bell pepper, and parsley.
Add the crispy tofu and lemon juice and mix until everything is combined.
