Ingredients:

1 large ripe plantain, peeled and sliced into 1/2 inch thick slices
2 tablespoons all
purpose flour
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1/2 cup panko breadcrumbs

Cooking Instructions:

In a shallow bowl, combine the flour, salt and pepper.
Dip each plantain slice into the flour mixture to coat both sides.
Heat the oil in a large skillet over medium heat.
Place the coated plantain slices in the hot oil and cook for 3-4 minutes on each side until golden brown and crispy.
Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
Place the panko breadcrumbs in a shallow bowl or plate and dip each fried plantain slice into it to coat both sides evenly with crumbs.
Return to the skillet and cook for an additional 2 minutes on each side until golden brown and crispy.
Serve hot with your favorite dipping sauce or as is!
