Ingredients:

100g white fish fillet (e.g. cod or haddock)
2 tablespoons of plain flour
1 egg, beaten
2 tablespoons of panko breadcrumbs
1 tablespoon of olive oil

Cooking Instructions:

Place the fish fillet on a plate and season with salt and pepper.
Place the flour in a shallow bowl and season with salt and pepper.
Place the beaten egg in another shallow bowl.
Place the panko breadcrumbs in a third shallow bowl.
Dip the fish fillet into the flour to coat it evenly on both sides then shake off any excess flour.
Dip the floured fish into the beaten egg to coat it evenly on both sides then shake off any excess egg mixture.
Finally dip the egg-coated fish into the panko breadcrumbs to coat it evenly on both sides then shake off any excess crumbs.
Heat the olive oil in a large frying pan over medium heat until hot but not smoking then add the coated fish fillet to the pan and cook for 5 minutes each side until golden brown and cooked through (the internal temperature should reach 75°C).
