Ingredients:

2 boneless chicken breasts
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of paprika
½ teaspoon of salt
½ teaspoon of black pepper
2 cups of lettuce leaves (chopped)
1 cup of cherry tomatoes (halved)
½ cup of cucumber (diced)
¼ cup of red onion (diced)
¼ cup of croutons
2 tablespoons of ranch dressing

Cooking Instructions:

Preheat the oven to 375°F. Place the chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil and season with garlic powder, paprika, salt and pepper. Bake for 15 minutes or until cooked through. Allow to cool before slicing into strips.
In a large bowl combine the lettuce leaves, cherry tomatoes, cucumber and red onion. Add the croutons and fried chicken strips and toss together until combined.
Drizzle the ranch dressing over the salad and toss again until everything is evenly coated in dressing. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
