Ingredients:

1 medium turnip, peeled and diced into small cubes
1/4 cup vegetable broth or water
2 tablespoons vegan butter or olive oil
1/4 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons nutritional yeast (optional)
2 tablespoons chopped fresh parsley (optional)

Cooking Instructions:

Heat the vegan butter or olive oil in a large saucepan over medium heat. Add the diced turnips and sauté for 5 minutes until lightly browned.
Add the vegetable broth or water, garlic powder, salt and pepper to the pan and bring to a boil. Reduce heat to low and simmer for 15 minutes until the turnips are tender.
Remove from heat and use an immersion blender or regular blender to blend the soup until smooth. If using a regular blender, be sure to blend in batches so as not to overfill it with hot liquid.
Return the soup back to the saucepan over low heat and stir in nutritional yeast (if using). Simmer for an additional 5 minutes until heated through. Taste for seasoning adjustments if needed.
Serve warm with chopped parsley as garnish (optional). Enjoy!
