Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 can (14 ounces) diced tomatoes with juice
½ cup white wine
1 teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon red pepper flakes
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the vegetable broth, diced tomatoes with juice, white wine, oregano, basil and red pepper flakes. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Remove from heat and use an immersion blender to blend until smooth. Alternatively you can transfer the soup to a blender or food processor to blend until smooth.
Return the soup to the pot over low heat and season with salt and pepper to taste. Simmer for an additional 5 minutes before serving.
