Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 tablespoons tomato paste
2 cups vegetable broth
1 can (14.5 ounces) diced tomatoes with juice
1 teaspoon dried oregano
1 teaspoon dried basil leaves
Salt and pepper to taste
¼ cup fresh basil leaves for garnish

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the tomato paste and cook for another minute until fragrant.
Pour in the vegetable broth and diced tomatoes with juice. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the oregano, dried basil leaves, salt and pepper to taste then simmer for another 5 minutes or until desired thickness is reached.
Serve hot with fresh basil leaves as garnish if desired. Enjoy!
