Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 cup diced butternut squash
1/4 cup vegan parmesan cheese (or nutritional yeast)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the vegetable broth and butternut squash to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes or until the squash is tender.
Remove from heat and blend with an immersion blender or transfer to a blender or food processor and blend until smooth.
Return the soup to the pot over low heat and stir in the vegan parmesan cheese (or nutritional yeast). Simmer for 5 minutes more then season with salt and pepper to taste.
Serve hot with extra vegan parmesan cheese (or nutritional yeast) if desired. Enjoy!
