Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 cup almond milk or other non
dairy milk of choice
2 cups fresh spinach leaves, chopped
½ cup feta cheese crumbles (vegan if desired)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the vegetable broth and almond milk to the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the spinach leaves and feta cheese crumbles to the pot and simmer for an additional 5 minutes or until the spinach is wilted.
Season with salt and pepper to taste. Serve hot with crusty bread or crackers if desired.
