Ingredients:

1 large potato, peeled and diced into small cubes
1/2 cup vegetable broth
1/4 cup almond milk or other non
dairy milk of choice
2 tablespoons nutritional yeast flakes
1 teaspoon garlic powder
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the diced potatoes and vegetable broth. Bring to a boil and reduce heat to low. Simmer for 15 minutes or until potatoes are tender.
Add the almond milk, nutritional yeast flakes, garlic powder, salt and pepper to the saucepan. Stir until combined. Simmer for an additional 5 minutes or until heated through.
Using an immersion blender or regular blender, blend the soup until creamy and smooth. Serve warm with your favorite toppings such as fresh herbs or vegan cheese shreds.
