Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
2 cups frozen peas
1/2 teaspoon dried thyme leaves
Salt and pepper to taste
2 tablespoons nutritional yeast (optional)

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the vegetable broth, frozen peas, thyme leaves, salt and pepper to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Remove from heat and use an immersion blender to blend until smooth. Stir in nutritional yeast if desired. Serve warm with crusty bread or crackers if desired.
