Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
250g mushrooms (any variety), sliced or chopped
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 cups vegetable broth
1/2 cup coconut milk (or other non
dairy milk)

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the mushrooms to the pot and cook until they are lightly browned, about 5 minutes. Stir in the thyme, oregano, salt and pepper.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the coconut milk to the pot and stir until combined. Simmer for an additional 5 minutes or until heated through. Serve hot with crusty bread or crackers if desired.
