Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 stalks celery, diced
1 large potato, peeled and diced into small cubes
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
4 cups vegetable broth or stock
½ cup coconut milk or almond milk (optional)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the celery and potato to the pot and cook for 5 minutes.
Add the thyme and oregano to the pot and stir to combine.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the potatoes are tender.
Remove from heat and stir in the coconut milk or almond milk (if using). Use an immersion blender to blend until smooth (or transfer to a blender). Season with salt and pepper to taste. Serve warm with crusty bread or crackers on the side. Enjoy!
