Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
500g carrots, peeled and diced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1 litre vegetable stock or water
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the carrots and spices and cook for another 5 minutes.
Pour in the vegetable stock or water and bring to a boil. Reduce the heat to low and simmer for 20 minutes or until the carrots are tender.
Remove from heat and blend with an immersion blender until smooth. Season with salt and pepper to taste.
