Ingredients:

2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups canned diced tomatoes with juice
1 cup vegetable broth or water
1/4 cup heavy cream or coconut milk (for vegan option)
2 tablespoons fresh basil leaves, chopped
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the canned tomatoes with their juice and the vegetable broth or water. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Remove from heat and stir in the cream or coconut milk (for vegan option). Puree the soup using an immersion blender until smooth.
