Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 large sweet potatoes, peeled and cubed
1 teaspoon ground cumin
1 teaspoon smoked paprika
4 cups vegetable broth
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the sweet potatoes, cumin, smoked paprika, vegetable broth, salt and pepper. Bring to a boil then reduce heat to low and simmer for 15 minutes or until the sweet potatoes are tender.
Use an immersion blender to blend the soup until smooth. Alternatively you can transfer the soup to a blender or food processor and blend until smooth.
Serve warm with your favorite toppings such as croutons or fresh herbs. Enjoy!
