Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
500g butternut squash, peeled and cubed
1 teaspoon ground cumin
1 teaspoon ground coriander
500ml vegetable stock
100ml single cream

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook for 5 minutes until softened.
Add the butternut squash cubes to the pan and cook for a further 5 minutes.
Add the cumin and coriander to the pan and stir to combine. Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer for 10 minutes until the squash is tender.
Remove from heat and blend with a hand blender until smooth. Stir in the cream until combined then season with salt and pepper to taste. Serve hot with crusty bread or croutons if desired.
