Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
2 cups vegetable broth or stock
2 cups fresh spinach leaves, chopped
1/2 cup crumbled feta cheese
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano and cumin and cook for another minute.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes.

Remove from heat and stir in the feta cheese until melted. Season with salt and pepper to taste.
