Ingredients:

1 large potato (200g), peeled and diced into small cubes
2 tablespoons of butter (30g)
1/4 cup of onion (50g), finely chopped
1/4 cup of celery (50g), finely chopped
2 cloves of garlic (10g), minced
2 cups of vegetable broth (500ml)
1/2 cup of heavy cream (125ml)
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the onion, celery and garlic and cook until softened, about 5 minutes.
Add the potatoes to the pot and stir to combine. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until potatoes are tender.
Remove from heat and use an immersion blender to blend the soup until creamy. Alternatively you can transfer the soup to a blender or food processor and blend until smooth.
Return soup to pot over low heat and stir in heavy cream until combined. Season with salt and pepper to taste before serving.
