Ingredients:

1 medium potato, peeled and diced into small cubes
2 tablespoons butter
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme leaves
2 cups vegetable broth or chicken broth
1/2 cup heavy cream or half
and
half
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the onion, celery and garlic and cook until softened, about 5 minutes.
Add the potatoes and thyme leaves and cook for another 5 minutes.
Pour in the broth and bring to a boil. Reduce heat to low and simmer for 20 minutes or until potatoes are tender.
Remove from heat and stir in the cream or half-and-half until combined. Season with salt and pepper to taste.
