Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas
2 cups vegetable broth
1/2 cup heavy cream or half & half
1/2 cup shredded cheddar cheese
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the frozen peas and vegetable broth to the pot. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Remove from heat and stir in the cream or half & half. Use an immersion blender or regular blender to blend until smooth.
Return soup to pot over low heat and stir in cheddar cheese until melted. Season with salt and pepper to taste. Serve warm.
