Ingredients:

1 cup cooked butternut squash, mashed or pureed
1/2 cup vegetable broth or water
1/4 cup unsweetened almond milk or other non
dairy milk of choice
1/4 teaspoon garlic powder
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the mashed butternut squash, vegetable broth or water, almond milk, garlic powder, salt and pepper. Stir until combined.
Bring the mixture to a boil then reduce heat to low and simmer for 15 minutes.
Remove from heat and use an immersion blender to blend the soup until smooth and creamy. Alternatively you can transfer the soup to a blender and blend until smooth.
Serve warm with your favorite toppings such as croutons or roasted pumpkin seeds. Enjoy!
