Ingredients:

1 onion, diced
2 cloves garlic, minced
teaspoon ground cumin
1 teaspoon ground coriander
2 cups vegetable broth
2 cups spinach leaves, chopped
1/4 cup cashews, soaked overnight and drained
1/4 cup nutritional yeast
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the onion and garlic and sauté for 3-4 minutes until softened.
Add the cumin and coriander to the pot and stir to combine. Cook for 1 minute until fragrant.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the spinach leaves to the pot and cook for an additional 5 minutes until wilted.
Remove from heat and add the cashews, nutritional yeast, salt, and pepper to the pot. Blend with an immersion blender until smooth and creamy. Serve warm with your favorite toppings!
