Ingredients:

2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
200g mushrooms, sliced
1 cup Arborio rice
4 cups vegetable stock or broth
2 tablespoons butter
½ cup Parmesan cheese, grated
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the mushrooms and cook for an additional 5 minutes.
Add the Arborio rice and stir to combine with the vegetables. Cook for 1 minute before adding the vegetable stock or broth. Bring to a boil then reduce heat to low and simmer for 15 minutes or until all liquid has been absorbed and rice is cooked through.
Remove from heat and stir in butter and Parmesan cheese until melted and combined. Season with salt and pepper to taste before serving.
