Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
500g carrots, peeled and diced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 litre vegetable stock
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the carrots to the pot and cook for 5 minutes until lightly browned. Stir in the cumin and coriander.
Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer for 15 minutes or until carrots are tender.
Use an immersion blender to blend the soup until smooth or transfer it to a blender or food processor to blend until smooth. Season with salt and pepper as desired.
Serve warm with your favorite toppings such as croutons or fresh herbs if desired. Enjoy!
