Ingredients:

1 head of broccoli, chopped into small florets
2 cloves of garlic, minced
1 tablespoon of olive oil
2 cups of vegetable broth or stock
1/2 cup of heavy cream or coconut milk (for vegan option)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the garlic and sauté for 1 minute.
Add the broccoli florets to the pot and cook for 3 minutes until they start to soften.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes until the broccoli is tender.
Remove from heat and use an immersion blender to blend the soup until it’s smooth and creamy. Alternatively, you can transfer the soup to a blender or food processor and blend until smooth.
Return the soup to the pot over low heat and stir in the heavy cream or coconut milk (for vegan option). Simmer for 5 minutes until heated through. Season with salt and pepper to taste before serving.
