Ingredients:

2 medium zucchinis (about 500 g), diced
1 onion (about 150 g), diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
2 cups vegetable broth
1/2 cup unsweetened almond milk or other non
dairy milk
2 tablespoons nutritional yeast flakes

Cooking Instructions:

Heat a large pot over medium heat. Add the diced onion and garlic and sauté for 3-4 minutes until softened.
Add the diced zucchini and spices to the pot and cook for another 3-4 minutes until fragrant.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes until the zucchini is tender.
Remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth then return to the pot over low heat.
Stir in the almond milk or other non-dairy milk along with nutritional yeast flakes until combined then season with salt and pepper to taste if desired. Simmer for another 5 minutes before serving hot with your favorite toppings such as fresh herbs or croutons if desired!
