Ingredients:

2 cups turnips, peeled and diced
1 cup vegetable broth
½ cup coconut milk
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the turnips and vegetable broth. Bring to a boil then reduce heat to low and simmer for 15 minutes or until the turnips are tender.
Add the coconut milk, garlic powder, onion powder, salt and pepper to the saucepan and stir until combined. Simmer for an additional 5 minutes or until heated through.
Using an immersion blender or regular blender, blend the soup until smooth. Serve warm with your favorite toppings such as fresh herbs or croutons. Enjoy!
