Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 cups butternut squash, peeled and cubed
1 teaspoon ground ginger
1 teaspoon ground cumin
½ teaspoon ground coriander
4 cups vegetable broth
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the butternut squash cubes to the pot along with the ginger, cumin, coriander, vegetable broth, salt and pepper. Bring to a boil then reduce heat to low and simmer for 20 minutes or until the squash is tender.
Use an immersion blender or transfer the soup to a blender or food processor in batches and blend until smooth. Serve hot with your favorite toppings such as croutons or shredded cheese.
