Ingredients:

1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1 cup almond milk or other non
dairy milk of choice
2 cups fresh spinach leaves, chopped
½ cup feta cheese crumbles (optional)
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, sauté the onion and garlic in a few tablespoons of water until softened.
Add the vegetable broth and almond milk to the pot and bring to a boil.
Reduce heat to low and add the spinach leaves. Simmer for 10 minutes or until the spinach is tender.
