Ingredients:

2 potatoes (peeled and diced)
1 onion (diced)
2 cloves garlic (minced)
2 tablespoons butter
2 cups vegetable broth or chicken broth
1 cup heavy cream or half & half
Salt & pepper to taste

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the diced onion and garlic and sauté until softened, about 5 minutes.
Add the diced potatoes to the pot and stir to combine. Cook for another 5 minutes.
Pour in the vegetable or chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until potatoes are tender.
Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender or food processor in batches and blend until smooth before returning it to the pot.
Stir in the cream or half & half until combined then season with salt & pepper to taste. Simmer for another 5 minutes before serving hot with your favorite toppings such as croutons or bacon bits!
