Ingredients:

200g mushrooms, sliced
1 onion, diced
2 cloves garlic, minced
2 tablespoons butter or olive oil
2 tablespoons all
purpose flour
500ml vegetable stock or broth
150ml cream or milk (optional)
Salt and pepper to taste

Cooking Instructions:

Heat the butter or oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the mushrooms and cook for another 5 minutes until they are softened.
Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute more.
Slowly pour in the vegetable stock while stirring constantly to prevent lumps from forming. Bring to a boil then reduce heat to low and simmer for 10 minutes until thickened slightly.
If desired, add cream or milk at this point and stir to combine. Simmer for an additional 5 minutes until heated through. Season with salt and pepper to taste before serving hot with crusty bread or crackers on the side if desired.
