Ingredients:

2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 stalks celery, diced
2 potatoes, peeled and diced
1 teaspoon dried thyme
4 cups vegetable broth
1 cup heavy cream
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat melt the butter. Add the onion and garlic and cook until softened.
Add the celery and potatoes and cook for another 5 minutes. Stir in the thyme. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until vegetables are tender.
Remove from heat and stir in the heavy cream. Use an immersion blender or regular blender to blend until smooth. Season with salt and pepper to taste. Serve warm with crusty bread or crackers if desired.
