Ingredients:

30g butter
1 small onion, diced
2 cloves garlic, minced
2 stalks celery, diced
1 teaspoon dried thyme leaves
2 tablespoons all
purpose flour
500ml vegetable stock or broth
120ml heavy cream or half
and
half cream
60g blue cheese, crumbled

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the onion and garlic and cook until softened, about 5 minutes.
Add the celery and thyme and cook for another 3 minutes.
Sprinkle the flour over the vegetables and stir to combine. Cook for another minute or two until the flour is lightly browned.
Slowly pour in the vegetable stock while stirring constantly to prevent lumps from forming. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the cream and blue cheese and stir until combined. Simmer for another 5 minutes or until thickened slightly. Taste and adjust seasoning if needed with salt and pepper.
