Ingredients:

1 onion, chopped
2 cloves garlic, minced
500g carrots, peeled and chopped
1 litre vegetable stock
1 teaspoon ground cumin
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)

Cooking Instructions:

Heat a large pot over medium heat and add the onion and garlic. Cook for 3-4 minutes until softened.
Add the carrots and vegetable stock to the pot and bring to a boil. Reduce heat to low and simmer for 15 minutes or until the carrots are tender.
Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively you can transfer the soup to a blender or food processor and blend until smooth.
Return the soup to the pot over low heat and stir in the cumin, salt, pepper, and parsley (if using). Simmer for an additional 5 minutes before serving hot with crusty bread or crackers on the side if desired. Enjoy!
