Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 large carrots, peeled and diced
1 teaspoon fresh thyme leaves
2 cups vegetable broth
½ cup heavy cream
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots and thyme leaves to the pot and cook for another 3 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until carrots are tender.
Remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth.
Return soup to pot over low heat and stir in heavy cream until combined. Season with salt and pepper to taste before serving.
