Ingredients:

2 cups carrots (peeled and chopped)
1 cup vegetable broth
1/2 cup coconut cream or almond milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste

Cooking Instructions:

In a medium saucepan over medium heat, add the carrots and vegetable broth. Bring to a boil then reduce heat to low and simmer for 15 minutes or until the carrots are tender.
Remove from heat and let cool for 5 minutes. Transfer the carrot mixture to a blender or food processor and blend until smooth.
Return the blended mixture back to the saucepan over low heat. Add in the coconut cream or almond milk, garlic powder, onion powder, salt and pepper. Stir until combined and heated through.
Serve warm with your favorite toppings such as fresh herbs or croutons. Enjoy!
