Ingredients:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
500g asparagus spears, trimmed and cut into 2 cm pieces
1 litre vegetable stock
Salt and pepper to taste
2 tablespoons cream cheese
2 tablespoons fresh parsley, chopped

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the asparagus pieces and cook for 5 minutes until lightly browned. Pour in the vegetable stock and bring to a boil. Reduce heat to low and simmer for 15 minutes until the asparagus is tender.
Remove from heat and blend with an immersion blender until smooth. Stir in the cream cheese until melted then season with salt and pepper to taste. Serve hot with fresh parsley on top.
