Ingredients:

75g butter, softened
50g caster sugar
1 egg yolk
1 teaspoon vanilla extract
125g plain flour
2 tablespoons jam or jelly of your choice (for filling)

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
Gradually add the flour to the mixture and mix until a soft dough forms.
Roll tablespoonfuls of dough into balls and place on the prepared baking tray. Make an indentation in each cookie with your thumb or the back of a spoon and fill with jam or jelly of your choice.
Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
