Ingredients:

100g almond flour
200g powdered sugar
2 large egg whites (room temperature)
50g granulated sugar
1 teaspoon vanilla extract

Cooking Instructions:

Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
In a medium bowl, sift together almond flour and powdered sugar. Set aside.
In a stand mixer fitted with the whisk attachment, beat egg whites on medium speed until foamy. Gradually add in granulated sugar and continue to beat until stiff peaks form. Add in vanilla extract and mix until combined.
Gently fold in almond flour mixture into egg whites until fully incorporated and a thick batter forms.
Transfer batter to a piping bag fitted with a round tip and pipe 1-inch circles onto prepared baking sheets, leaving about 1 inch of space between each cookie. Tap baking sheets on countertop several times to release any air bubbles that may have formed during piping process. Let cookies sit at room temperature for 30 minutes before baking to allow them to form a skin on top (this will help them keep their shape while baking).
Bake for 15 minutes or until lightly golden brown on top and slightly firm to the touch when lightly pressed with your finger (cookies should not be too hard). Let cool completely before filling or serving as is!
