Ingredients:

125g butter, softened
100g caster sugar
1 egg yolk
1 teaspoon vanilla extract
250g plain flour

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Grease and line two baking trays with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
Gradually add the flour to the mixture and mix until a soft dough forms.
On a lightly floured surface, roll out the dough to about 5mm thick and cut out shapes using cookie cutters of your choice. Place on prepared baking trays and bake for 8-10 minutes or until golden brown around the edges. Allow to cool on trays before transferring to a wire rack to cool completely.
