Ingredients:

1 boneless skinless chicken breast (125g)
2 tablespoons all
purpose flour (15g)
1/4 teaspoon garlic powder (1g)
1/4 teaspoon onion powder (1g)
1/4 teaspoon paprika (1g)
Salt and pepper to taste
2 tablespoons vegetable oil (30ml)
1/2 cup all
purpose flour (60g)
2 teaspoons baking powder (10g)
1/2 teaspoon sugar (3g)
Pinch of salt
3 tablespoons melted butter or margarine (45ml)
3/4 cup milk or buttermilk (180ml)

Cooking Instructions:

In a shallow bowl, combine the chicken breast with the 2 tablespoons of all-purpose flour, garlic powder, onion powder, paprika, salt and pepper. Mix until the chicken is evenly coated. Set aside.
In a separate bowl, mix together the ½ cup of all-purpose flour, baking powder, sugar and salt. Add in the melted butter or margarine and milk or buttermilk and mix until combined. Set aside.
Heat the vegetable oil in a large skillet over medium heat. Once hot add in the chicken breast and cook for about 5 minutes per side or until golden brown and cooked through. Remove from heat and set aside on a plate lined with paper towels to absorb any excess oil.
Pour the waffle batter into a preheated waffle iron according to manufacturer’s instructions and cook until golden brown on both sides. Serve immediately with fried chicken on top or on the side as desired.
