Ingredients:

2 tablespoons of butter
1 shallot finely chopped
1 tablespoon of tarragon leaves finely chopped
1 tablespoon of white wine vinegar
2 egg yolks
Salt and pepper to taste

Cooking Instructions:

In a small saucepan over medium heat melt the butter. Add the shallot and cook until softened. Add the tarragon and cook for another minute. Add the white wine vinegar and bring to a simmer. Remove from heat and set aside.
In a medium bowl whisk together the egg yolks until light in color. Slowly add in the melted butter mixture while whisking continuously until all of the butter has been incorporated into the egg yolks. Season with salt and pepper to taste.
Return the mixture to the saucepan over low heat and cook while stirring constantly until thickened (about 5 minutes). Serve immediately over steak, fish or vegetables as desired.
