Ingredients:

2 cups chicken broth
1 cup water
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon minced garlic
1 teaspoon grated ginger root
2 ounces dried noodles (such as udon or ramen)
½ cup sliced mushrooms (such as shiitake or oyster)
½ cup sliced carrots
½ cup sliced bell peppers
¼ cup chopped scallions

Cooking Instructions:

In a large pot over medium heat, combine the chicken broth, water, soy sauce, sesame oil, garlic and ginger. Bring to a boil.
Add the noodles and cook for 5 minutes.
Add the mushrooms, carrots and bell peppers and cook for an additional 5 minutes.
Add the scallions and cook for an additional 2 minutes.
Serve hot with your favorite toppings such as chopped cilantro or chili flakes. Enjoy!
