Ingredients:

1 cup cooked white rice
2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup frozen peas and carrots mix
2 cloves garlic, minced
2 tablespoons soy sauce or tamari sauce
Salt and pepper to taste

Cooking Instructions:

Heat the vegetable oil in a large skillet over medium heat. Add the onion and carrots and cook for 3 minutes until softened.
Add the frozen peas and carrots mix, garlic, soy sauce or tamari sauce, salt and pepper to taste. Cook for another 3 minutes until vegetables are tender.
Add the cooked white rice to the skillet and stir everything together until combined. Cook for another 5 minutes until heated through. Serve hot.
