Ingredients:

1 fillet of white fish (150g)
2 tablespoons of vegetable oil
1 teaspoon of minced garlic
1 teaspoon of minced ginger
2 tablespoons of soy sauce
2 tablespoons of rice vinegar
1 tablespoon of sesame oil
2 tablespoons of cornstarch mixed with 2 tablespoons of water to make a slurry
½ cup of chicken broth or stock
½ cup of water
½ teaspoon of white pepper powder
¼ teaspoon of red pepper flakes
1 tablespoon of sugar
2 tablespoons of chopped green onions

Cooking Instructions:

Heat the vegetable oil in a large saucepan over medium heat. Add the garlic and ginger and cook for about 30 seconds until fragrant.
Add the soy sauce, rice vinegar, sesame oil, cornstarch slurry, chicken broth or stock, water, white pepper powder, red pepper flakes and sugar to the pan. Stir to combine all ingredients. Bring the mixture to a boil then reduce heat to low and simmer for 5 minutes.
Add the fish fillet to the pan and simmer for 10 minutes until cooked through.
Remove from heat and stir in the chopped green onions before serving hot with steamed rice or noodles if desired.
