Ingredients:
2 tablespoons vegetable oil
1/2 cup shredded cabbage
1/4 cup shredded carrots
1/4 cup bean sprouts
2 tablespoons chopped green onions
2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon garlic powder
4 egg roll wrappers
Cooking Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Add the cabbage, carrots, bean sprouts and green onions to the skillet and cook for 5 minutes or until vegetables are tender.
Add the soy sauce, sesame oil and garlic powder to the skillet and stir to combine. Cook for an additional 3 minutes or until vegetables are cooked through.
Remove from heat and let cool for 5 minutes before assembling egg rolls.
Place an egg roll wrapper on a clean work surface with one corner pointing towards you like a diamond shape. Place about 2 tablespoons of the vegetable mixture in the center of the wrapper and fold up the bottom corner over it so that it covers half of the filling. Fold in both sides of the wrapper so that they meet in the middle over top of the filling then roll up tightly towards the remaining corner until sealed shut with a bit of water if needed to help seal it closed. Repeat with remaining wrappers and filling until all egg rolls are assembled.
Heat a large skillet over medium heat and add enough oil to cover bottom of pan about 1/4 inch deep (about 2 tablespoons). Once hot add egg rolls to pan in batches if needed so as not to overcrowd them and cook for 3-4 minutes per side or until golden brown and crispy on all sides. Remove from pan onto paper towel lined plate to absorb any excess oil then serve warm with your favorite dipping sauce if desired!
