Ingredients:

2 slices of white bread
2 tablespoons of olive oil
1 large tomato, sliced into thin rounds
4 ounces of fresh mozzarella cheese, sliced into thin rounds
2 tablespoons of fresh basil leaves, chopped finely
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat and add the olive oil.
Place the two slices of bread in the skillet and toast for about 2 minutes on each side until golden brown.
Remove the bread from the skillet and place on a plate.
Layer the tomato slices and mozzarella cheese on one slice of bread and season with salt and pepper to taste.
Top with the other slice of bread and press down lightly to secure it in place.
Return the sandwich to the skillet and cook for about 3 minutes on each side until golden brown and cheese is melted.
Remove from heat and top with chopped basil leaves before serving warm.
